Spaghetti Squash - Gluten Free & Vegan
Roast spaghetti squash at 300 F for 1 hour. Meanwhile, steam broccoli & add S&P + EVO.
3 cloves garlic
3 dried porcini mushrooms
1 spring onion
1/2 can crushed tomatoes
A few leaves of oregano chopped
A few leaves of Basil chopped
2 T honey
1/4 c water
Blend garlic and porcini in food processor. Cook in EVO on medium high for 3 minutes. Add spring onion and cook another two minutes. Add tomatoes and water. Let simmer for 10 minutes then add herbs, simmer 5 more minutes. S&P to taste.
Add EVO and salt to spaghetti squash after pulled, tossing in a bowl. Toss on broccoli, plate and add sauce.
I like the benefits of eating spaghetti squash instead of pasta, but it always takes so much work to make. Gotta be a damn good recipe to be worth it. I’ll give this one a try next time I go to the store. :)
